Can a dry rub be on TOO long? (Pork Butt)

Thanks everyone. Logic told me all would be well. Lack of experience told me it couldn't hurt to ask, just in case... Bill, with the price of gas, I figure that would make for a $627 pork butt by the time you got it home. You may be able to do better buying locally. Bob, you may very well...

Can a dry rub be on TOO long? (Pork Butt)

Thanks very much. I figured, if necessary, I could rinse it off tomorrow morning, and then reapply a little while before going on the smoker. Seemed silly, but a possibility. I think "don't look back" is exactly the approach we'll be going for! Thanks again.

Can a dry rub be on TOO long? (Pork Butt)

Silly me. I seem to try something new every time I smoke something. Can't leave well enough alone, even though every "cook" has been received enthusiastically by my family/friends! Today, I thought I would try brining a pork butt with a molasses/koshier salt/water recipe I found here. Then...

    Site problem with "Cooking Topics"?

Thanks! Had not seen that. It seems to be working at the moment. It's been 9 months since my last pork butt smoke (been happily stuck in "Rib Mode"), and it is just nice to get a quick review on some details. Thanks for the responses.

Hmmm... Looks like none of the links in that top banner are working for me...

    Site problem with "Cooking Topics"?

Been trying last night and this morning to get on the "Cooking Topics" section at the top of the TVWBB forum home page. I keep getting an error message that the page cannot be found. I was wanting to review the "Renowned Mr. Brown" pork butt info for a smoke session this evening. Is part of...

    Any Maverick ET-732 Pros around?

Thanks, Dwain! The Thermoworks is a good looking unit. I solved one of my problems- operator error! I thought the power switch was labeled start/stop on the receiver, but an unlabeled button turned it on when held down for 4 seconds. Duh. I think I also proved to my satisfaction that the...

    Any Maverick ET-732 Pros around?

I'm having thermometer fits. At the end of a smoking frenzy last year, I ordered an ET-732. Months later, when the family was finally wanting pulled pork again, I fired up the 18.5" Weber and put in the probes with great expectations. Could not get the receiver to "talk" to transmitter. It...

Looking for Flexible Natural Gas Hose

OK, this is a long shot... I have a new Genesis S-330 natural gas grill, and love it! It has been a great replacement for my old Holland Grill that needed $250 worth of parts to carry on. Last weekend, I moved the grill to mow, and rolled it from behind the house. That night, we had...

Anyone have a good recipe for Ham Loaf in the WSM??

Rich and Kevin, I like the way you guys think, and your comments are making me hungry. Some combination of those spices may be just the thing. Three loaves are heating up 10 miles away as we "speak". I told them to try 275 for 90 minutes. I hope that is enought to bring refrigerated meat...

Anyone have a good recipe for Ham Loaf in the WSM??

Rich, I'm glad you came up with a winning twist on this effort. Sounds like you are adding another possibility to your "smoking stable" of recipes. I am about to put three loaves on the smoker for tomorrow's Easter lunch. If we were eating here, I'd let them cook during church services, but...

Anyone have a good recipe for Ham Loaf in the WSM??

A final report: We had the leftovers of the Ham Loaf tonight, and the accolades were strong once again! Since the meatloaf was not coated with any sauce for smoking, I made up a little side sauce from the recipe Chris presents in his meatloaf section on this site's Cooking Tips: Mom G's...

Anyone have a good recipe for Ham Loaf in the WSM??

Well, supper is over, and by the family reviews, the attempt was a winner! It was windy enough that I had trouble getting the WSM up to temp for the first time in my experience. It ended up being a 2 hour cook at about 275 (wanted 325-350) to get the meat above 165 degrees, but the bacon still...

Anyone have a good recipe for Ham Loaf in the WSM??

You may VERY well be right, Kevin. Most the recipes I found had egg and crackers, milk and bread crumbs, tapioca, or SOMETHING as a binder. My "mix" is in the fridge, and seems to resemble what we had before. I guess Edison "succeeded" in finding 1,000 things that would NOT work for a...

Anyone have a good recipe for Ham Loaf in the WSM??

Kevin- Your recipe sounds good. I am trying to replicate what we liked so much a month ago, so I'm going to attempt to make something from the ingredient list they gave me. If I flop, your "formula" will be the next try. Rich- I did a web search for hours trying to find a recipe with the...
