Vaunted Vinegar Sauce
MAKES ABOUT 2 CUPS
2 cups cider vinegar or white vinegar
2 tablespoons granulated sugar or packed brown sugar
2 teaspoons kosher salt or coarse sea salt
1 teaspoon freshly ground black pepper
1 teaspoon cayenne or crushed red chile flakes
Combine all of the ingredients in a bowl and stir to dissolve the sugar. Serve at room temperature or chilled. The sauce keeps indefinitely.
