ok, not sure exactly how it should work, but after my fatty this morning I shut down all the vents...... 2 pm the Mav was still sending 218 deg to the receiver, So I added more Kingsford. About 20-25 , went to home depot and came back with some apple wood chunks tossed a couple on and then opened vents, went inside and prepped turkey, rinsed brine, towel dried and applied rub. When Mav said 250 put the bird on, weighed in at 4.5 lbs cooked at 250/260 for just over 2.5 hours to 160 deg measured with mav.
optical illusion? I know thats at a gallon ziplock 1/4 cup salt 1/4 cup brown sugar and pepper

Juicy , skin was not crisp. I don't eat skin so whoooooo cares. Doggie didn't mind rubber skin
