Well, getting ready for my dinner party of 12 (which ended up being 14 when 2 more people just "happened to be in the area" after they heard I was making ribs...they live 40 miles away)
I remembered a few people saying that they saw no difference by NOT turning the racks midway in cooking. I decided to try it out.
IMHO...there is a HUGE difference...the tops of the racks were drier, albeit still good. Turning the racks basted both ends equally and results in a more tender and equal cook at the bone ends of the ribs.
Never again...I'm back to turning.
