Stuffed French Toast

This was breakfast this morning. DH and I were both surprised by how good it was. Hope you try it and like it also.

Stuffed French Toast

20 slices bread, crusts trimmed, cubed
16 oz. cream cheese, cubed
Cinnamon to taste
12 eggs, beaten
1 3/4 cups milk
1/3 cup maple syrup
1 tsp. vanilla extract
Confectioners' sugar

1. Spread half the bread cubes in a baking pan sprayed with nonstick cooking spray. Arrange the cream cheese over the bread. Sprinkle generously with cinnamon. Top with the remaining bread cubes.
2. Whisk the eggs, milk, maple syrup and vanilla in a bowl until blended. Pour over the prepared layers. Chill, covered, for 8 to 10 hours.
3. Bake at 375 degrees for 45 minutes. Sprinkle with confectioners' sugar. Serve warm with syrup. Serves 15
