All I can find around here are these scrony little alder chips, no chunks. can I use em? Or should I just use the apple chunks I have?
Looking to start cooking around noon.

You should be fine with the chips. Since salmon don't cook that long (compared to butt or ribs), the smoke from the chips will be more than adequate.

Thanks for your reply Joe,
Do you think I should put the chips in a foil ball with some holes in it or just toss em in?

man I wish could find chunks. I will try to use chips in a bag of foil. Just dont sound right. Thanks for you help.

Maybe I should go into business...I've got a cord or Alder wood sitting my back yard curing right now! Had 3 trees, but the roots got into a sewer pipe so all of them were cut down. If you guys were closer I'd offer ya a coupla logs each.

My problem is that there's no wild salmon here...all of it is farm raised. They shut down commercial salmon fishing in the pacific this year.
