Pork Butt Quick cook

I need to make a Pork Butt for PP on saturday and plan to try the Quick cook method listed in the cooking topics. My question is after cooking in the foil and getting the internal temp up to 190 or so can you then unfoil and place back on the WSM and get some more bark on it?
