Well, I hope everyone here had a fantastic Christmas and I wish all of the you the very best over this holiday season!

So, we had the family over for X-mas dinner and of course, had to do the turkey on the WSM!! First time of it as well! Picked up a nice 18 lb bird from the local Mennonite farm. So all natural, grain fed, etc. Brined for 24 hours in the apple juice brine from here.

Nice and cold here in Canada and snow for X-mas is always great too!:

I used Royal Oak charcoal and pecan wood for this smoke. Came out absolutely fantastic! Was super moist and juicy as well as just the right amount of smoke flavour. Everyone loved it and they all took some home at the end of the night too.

And, as I mentioned on some previous posts, I was a good boy this year and the family all chipped in and bought me this:

Ran pretty consistently around 360-370 for about 3 hours or so. Hit 167F and then pulled. Was happy to get to that high of a temp on the WSM being so cold here.
