Want something nice and cold for dinner on these hot, hot days? This was our dinner last night and it was very refreshing and cool and filling.
Mandarin Chicken Salad
3 cups diced cooked chicken
1 cup diced celery
2 TB. lemon juice
1 TB. finely chopped onion (asked DH to put in more)
3/4 cup mayonnaise (same here)
1 can (11 oz.) mandarin oranges, drained
1 cup seedless grapes, halved
1 tsp. lemon pepper
1/2 cup chopped pecans, toasted
In a medium bowl, combine first eight ingredients; mix well. Cover and chill for 1 to 2 hours. Fold in Pecans just before serving. Makes 4 servings.
