I went to a BBQ contest today in Westminster CA. It was a KCBS, I was sampling around some pretty good BBQ, I saw Harry Soo from slapyodaddy BBQ we talked for a while and I told him I was attending one of his classes in Dec, he was selling samples for everyone,but he let me try his competition BBQ,this stuff was not for the public, briskit,chicken and ribs, that rib was the best I have ever had ;) and the chicken was perfect you bite right thru it, and a handful of brisket and it was insane, I have not had BBQ like that ever!

Competition BBQ is soo different from what one would expect. A nice blending of flavors with some smoke.
You will really enjoy his class.

ps... Harry provides class manuals, but there is sooo much information covered, taking notes is something you will only fully appreciate afterwards.
