Experimental Bird Breasts

Got up this morning and brined a few Boneless Chicken Breasts. Thought maybe I'd just throw them in the oven or bread and fry them. Figured I'd worry about that later. So, this afternoon I was sipping a glass of wine and relaxing by a fire for awhile.



So I thought - I have a fire inside, why not one outside.

Started by marinading the breasts in a mixture of Lizano Salsa and Sriracha. I was introduced to the Lizano at a Hot Sauce shop in Tarpon Springs, FL.



Onto the fire indirect with some pecan for smoke.



When the internal temp hit 140 placed them on direct for a few minutes.



Then I finished by moving off the direct heat but close, and a light brushing with Stubbs Original.



Resting while I got a few things finished up.



Served with Jasmine Rice and a side salad of Endive, Radicchio & Onion with a Balsamic Tarragon Vinaigrette.





The chicken turned out melt-in-your-mouth moist with a fair amount of heat.

Another fine piece of poultry cookery, and very appetizing plating. Great Christmas setup in your living room!
