Cuban Style Roasted Pork

For those where it is too cold to grill. It also takes a day or two to make, but it sure sounds like it is worth it. DH said for me to put it in the "Make This Week" folder. (I sure hope so) šŸ„°


Cuban Style Roasted Pork

Rub:
1 4-6 lb. Pork Shoulder
4 cloves of garlic
1 tsp. dried oregano
1 tsp. course salt
1 tsp. black pepper
1 TB. olive oil
To a mortar, add the garlic thru olive oil and pound to make a paste. With a knife, add quarter inch slots all over the pork. Rub paste over the pork, add to a large ziplock bag.

Adobo Sauce:
1 lime, juiced
1 cup orange juice, pulp free
2 TB. chopped cilantro
2 TB. brown sugar
1 TB. course salt
1/2 TB. black pepper
4 cloves of garlic, finely chopped
1 1/2 tsp. dried oregano
1 tsp. dried thyme
1/2 tsp. dried majoram
Add all ingredients into a blender or food processor and pulse until everything is combined. Add sauce to bag and move it all around. Marinate for 12 to 24 hours.

1. Preheat oven to 250 degrees. Use large roasting pan with rack. Place pork on rack, save sauce. Add 3 cups of water to the pan. Cook 5 to 8 hours, covered with foil. Add the remaining sauce to sauce pan and bring to boil, reduce to simmer adding more orange juice if desired. After the cook time, remove foil, increase heat to 400 degrees and cook for about 10 minutes.
2. Remove from oven, let rest for 10 minutes.
3. Slice an onion, slice or pull apart pork. Place on platter, top with onion and pour sauce over pork.
