Can you smoke a pot roast?

I never smoked one before, and would love some advice before I make an attempt and kill it :)

The roast I have is 4 1/2 pounds. Here is what I was thinking...
  • Season roast
  • 2 hours at 250
  • Transfer to dutch oven - add beef broth, veggies and cover
  • Bump up temp to 275-300
  • Braise for several hours until IT hits optimal temp
Thoughts?
 
I've never smoked a pot roast, but that looks like a good approach.

Is the fat and drippings from the pot roast needed as part of the sauce?

If yes, and Presuming this is being cooked on the 850 pro you could put the roast on the upper shelf with the dutch oven below.

And, after you transfer to the dutch oven you might consider moving it inside to an electric oven. I'm guessing the cost of electricity is significantly less than the cost of pellets.
 
 
I never had a pot roast I didn’t like unless it was undercooked and tough. I have been thinking about making one myself. Lipton onion soup and cream of mushroom soup.
 
I do pot roast made from whole brisket. So my answer is yes. Smoke for 2-3 hours and then add to roasting pan and assemble the seasoning for jus and cook in foiled roasting pan till tender.
