BBQ Chicken

Cut Chicken in half & sprayed w/Pam so Rub would stick. Applied a Base Coat of the Texas Trinity (S,P,&G). Then applied my Homemade Chicken Rub. Cooked Indirect on the Kettle. Legs towards the heat. Cooked till thighs were at 155. Hit with a Glaze then cooked 20 mins more till thighs read 175 & breast 165. Served with Cheesy Scalloped Potatoes & BBQ Beans

Sure! Slice & boil potatoes for 7 mins. Make a Roux in separate Pot- 6 Tbsp of Butter & 3 Tbsp of Flour. Add 2 Cups of Heavy Cream & add 2 Cups of Shredded Cheese. Once cheese has melted pour over potatoes & mix it in good so all potatoes are covered in sauce. Then top with 2 more Cups of Shredded Cheese. Bake @400 for 30 mins. Fry up some Bacon for Bacon Bits & chop up some green onions for Topping when Potatoes are done!!

Great looking chicken Kemper. Have you ever tried using mustard to hold your seasoning on. Rich and I do that all the time, it works great.
