Barbecue Pork Burgers with Coleslaw

Here is another pork burger that we made back in '05. My notes say it should cook a little longer, but it was very good.

Barbecue Pork Burgers with Coleslaw

Barbecue Sauce:
1/2 cup minced onion
2 garlic cloves, minced
2 TB. unsalted butter
1 cup ketchup
3 TB. Worcestershire sauce
2 tsp. dry mustard
1/4 cup cider vinegar
1/4 cup firmly packed brown sugar
2 1/2 tsp. chili powder
1/2 tsp. Tabasco

1 1/2 lbs. ground pork
3 TB. fresh bread crumbs
For the coleslaw:
2 cups thinly shredded cabbage
1/4 cup coarsely grated carrot
1/4 cup thinly sliced red onion
2 tsp. fresh lemon juice
3 TB. mayonnaise, or to taste

4 sesame hamburger buns, split and toasted

1. Make the barbecue sauce: In a heavy saucepan cook the onion and the garlic in the butter over moderately low heat, stirring,
until the onion is softened, add the mustard, vinegar, brown sugar, chili powder and Tabasco and simmer mixture, stirring
occasionally, for 15 minutes. Transfer the sauce to a bowl and let cool.
2. In a bowl combine pork, breadcrumbs and 1/3 cup of sauce and form into 1" thick patties. Season with salt and pepper and grill,
basting often and turning several times, for 8 to 9 minutes on each side. or until they are just cooked through.
3. Make the coleslaw while the burgers are grilling. In a bowl, stir together the ingredients.
4. Transfer burgers to the buns and top with coleslaw. Serve the remaining sauce separately. Serves 4
