The Wife had a carry-in last week and signed-up for a dessert. Then she came home and said "I need you to make something impressive for me to take to work on Monday." I am not a dessert maker but when she says I need to do something I jump to it. So I psyched myself up for the challenge so long as it didn't require decorating.

I actually made one for us to try at home first. It passed our test, so I made a second one for her carry in. I did cheat and used the KitchenAid corer/slicer for the apples.

Ingredients for Apple Coffee Cake (Apple Dapple):
3 large eggs, room temp
1 cup oil (extra light olive oil or vegetable oil)
1 cup granulated sugar
2 tsp vanilla extract
3 cups all-purpose flour *measured correctly
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 1/3 cups walnuts or pecans, toasted and chopped
3 cups (1 lb or 2 large) granny smith apples
Ingredients for Caramel Sauce:
1 cup light brown sugar
6 Tbsp unsalted butter
1/4 cup milk, any kind
1/2 tsp vanilla extract
pinch salt
