A funny thing happened on the way to perfect ribs...

well lets start by saying good ribs may be my favorite food on my wsm. Well for longest time i could not figue out why they were not turning out just right. So one day i decided to try and cook them faster. I usually would cook at 225 on my thermometer so i kicked it up to 300. Well low and behold the ribs were perfect... why you ask? my thermometer is wrong. I checked two other that i have and my thermometer i always used was 35 degrees off. So the moral of the story is be sure to check you thermometer instead of wondering why food is not coming out right. If there is one thing we know it is not the WSM that is wrong it is usually something else. In this case the thermometer and the operator.
