I have a 4 lb bone in pork loin, my question, if I cook till center is 160 will the ends be over cooked? I planned to smoke it at 225-250 any suggestions would be appreciated
No need to cook to 160*. Cook to 145* in the thickest part near but not touching any bone. If you don't want to overcook, there should still be some pink to the meat. The minimum temp for safety is 140*
If you intend on resting it wrapped in foil for at least 30 mins, then if you want perfection then remove the meat from the smoker once it reaches an internal temp of 135f. It will continue to rise in temp by 10 degrees and will be a perfect 145f when you're ready to eat.
