    Re-Crisp Fried Chicken?

    I make fried chicken about once or twice a year. Has anyone found a good method for re-crisping it upon reheating? I do have a convection oven. I shallow-fry it in about 3/8" oil to get the coating set and lightly colored, then finish it on a rack over a sheet pan in the oven. Rita
