Expanding my horizons -or- a first for me

took a piece of "beef plate skirt steak", pounded it a little, put some feta on it, black pepper, spinach, more black pepper, and rolled it:

I used one skewer to secure it, and of course I left the ugly side out:

Onto the Genesis, I think for a little over 12 minutes on medium (started @ 450F, ended @ 500F) - it read 145F, I figured that was safe so I pulled it and rested it for a few minutes:

That is awesome Clint, and very tasty looking! I like it and easy to do from your pics.

It was really easy! Really good too - try it or whatever flavors you might like. I'll be experimenting with this (lots of inspiration on this board)
