Did the tri tip from the Weber book "The art of cooking with live fire"The recipe is from the Dueling bubbas. The tri tip is cooked kinda like a brisket.It is a recipe you will look at and say no way can that work.Let me tell you it is great!
 
Hey Jim,

I have used that recipe with surprisingly good results as well! It seems to work well for those who don't like the Med-Rare temp a good tri-tip deserves. The smoking really cuts down on the chewiness and works great on buttered French rolls with BBQ sauce. I used the foiled method they describe in the book, but wonder how it would turn out if I did it without wrapping the meat. I will have to try it some time.

Glad to hear that tris cooked this way turn out so good!
I've wanted to make one using this recipe ever since I saw it in the book.
Seems like a way to get a good smoke on them.
