Welcome to the forum Kemper!! Glad you are here. How long have you been cooking (on the WSM)? From Texas, I assume you cook beef?
 
Ive been cooking about 3 yrs. Just had gastric bypass surgery. I'm going to have to slow down on brisket & ribs. Chicken & fish mostly. Even though I cooked a few country style ribs yesterday & a pork butt. Old habits die hard. Lol
 
Welcome aboard. I grew up next to you in Garland. Mom still lives there. My brother and his family are in Allen. I look forward to seeing some of your cooks.
