Smoked / Braised Pork Butt

Had to do this again, Thanks again Mike Coffman for this cook method. Started the cook at 5AM expecting it to be done at 1PM then a one hour rest, then off to our friends house (he's a Coastie) always makes for a fun 4th of July

Two, 7.5 LBS butts, going to use two beer, brown sugar & mustard as my braise, I'm adding an hour to the time on the smoker (4 hours) and assuming I'll have to knock an hour off the braise. Time will tell

Making the move from the grill to the braise at 9AM next stop, 1PM should be done

It was done, one hour early, I'm so glad I checked. It took 7 hours at 250 degrees on my dome dial

I love this pulled pork, it's amazing! I'll try to get a picture when it gets pulled, I'm taking it to my buddy's house as seen.

Great stuff Chuck! A huge thanks to Mike Coffman for posting the original and to you for following up on this. We had it last weekend for a combined birthday party and smoked for 4hrs and braised for 4hrs at 250.

I used The Renowned Mr Brown from Smoke and Spice for the rub, braised with Guinness and finished with a sweet sauce. Will be using this method again.

You will return from your buddy's house a hero! Looking forward to the pulled pics....

Not my pictures, but it was all I got. The day was goofy at best, turns out no sooner do we walk in the door and he gets notice he's being deployed and his wife went nuts. Not a fun party, but I have to say, the PP was good :)

Wow - great looking PP Chuck. How did you come up with a beer and mustard braising liquid? That is pretty interesting...

Mike Coffman came up with the beer braise, I wanted to tweak the cook a little and that's where I decided to add:

Brown Sugar
Mustard
Worcestershire Sauce
I'm thinking of adding a squeezed lemon and a teaspoon or two of white vinagar the next time around

This is byfar our favorite way to cook PP, and I especially like that it's done in as few as 7 hours (this cook)
