The process began a couple days ago:

Brine (based on Alton Brown)
1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1 1/2 teaspoons allspice berries
1 1/2 teaspoons chopped candied ginger
1 gallon heavily iced water



Then this AM main bird started before the sun peeked over the mountain.

"Stuffed":
1 red apple, sliced
1 onion, sliced
1 cinnamon stick
4 sprigs rosemary
6 leaves sage



... And placed over a RO fire with Apple and Peach wood @350*F

Awesome cook Dwain. Like Chris, I love the picture of the stuffed bird. The finished cook skin colour has a similar appearance to cherry wood smoke. I wonder if that's the peach? We don't see that up here much.
