Easy Pinto Beans

This is my wife's pinto bean recipe. It is very easy and really has a nice flavor.

Pinto Beans

Ingredients

1 2 pound bag dried pinto beans, sorted and rinsed to remove dirt and rocks
1 10 ounce can diced tomatoes and green chiles, (recommended: Ro-Tel)
6 tablespoons pinto bean seasoning mix, (recommended: Fiesta brand)
1 onion, medium, chopped
3 cloves garlic, chopped
2 teaspoons kosher salt
1 teaspoon ground black pepper
4 slices bacon, cut into 2 inch pieces


Method

Rinse beans well in a colander and then let soak in water 2 to 3 hours. Drain beans and put in a Dutch oven. Add all other ingredients. Add enough water to cover all plus about 1 inch. Bring to a slow boil. Reduce heat and continue to cook at a simmer for at least 3 hours, stirring occasionally until beans have reached desired doneness. If too much liquid is absorbed, add hot water during cooking.

Notes

Optionally, hold out about 1/2 pounds of the beans from the Dutch oven when beginning to cook. Add in after 30 minutes. These beans will be less done than the rest, and will give a bite to the finished beans.
