    Wrap chips in foil so they last longer. If you don't use water in pan, place foiled chips in water pan.

    Not sure 3 slabs can fit on a 18.5" without overlapping. If they overlap, meat needs to be turned frequently so you get an even cook. IMHO, I would add another cooking rack and cook everything at the same time.

    Was lump packed tight so it could ignite with ease? I always hand pack lump because pouring in alone will create airpockets and unlit coals.
