That time of year for new accessories *.*.*.*

*.*.*.* but, as usual, not for the US market. This time the Middle East is seeing several exclusive new accessories: Grilling Tweezer #6208 Grill and Plancha Spatula #6206 Ceramic Plancha #17885 Ceramic Pie Dish #17887 BBQ Leather Gloves #17896 Floor Protection Mat #17897 Ceramic Grill Pan...

    Revision?

Hi, Jamie. Can't wait to receive your new book! As in your previous Weber's New Real Grilling, have you found it necessary to revisit the classic recipes in this new book, making adjustments for changing tastes or ingredients? For example, the local food trend has really changed what chefs...

    Cooking for a crowd

First, what a treat to receive NEW AMERICAN BARBECUE in the mail yesterday. It is superb, Jamie. Yes, and it has all the classics of your other Weber publications—the fine photography by Tim Turner, for example—but what superb recipes and the stories: Wow, what an added bonus! I’m going to be...

    Apparel?

Kevin, How about exerting your considerable influence and have Weber allow us Weberphiles to purchase Weber branded apparel like the jackets and shirts you wear on the videos which the rest of us can only lust after? Gary

    New Weber accessories, but...

Hi, Jamie. I recognize that Weber has some great new accessories--last year's charcoal cast iron pieces, this year's plancha, and the like. Any chance that we might see some recipes crafted around these? Gary

    New tools

Weber has a number of new tools: 6468--wok tool set; 6655--steel pincer tongs, and 6650--sausage tongs. It looks like there are new aprons, brushes, etc. I don't have a complete list, but I bought these three on ebay. Gary

    New Weber add-on

Weber has a pizza stone that's removable from a stainless rack. The rack resembles the other Weber Style accessories, like the newer rib rack. The whole assembly is just a bit too big to go on to kettle and still lift the end grates.

    Prep area

Jamie, I have some vague questions and expect only subjective answers. Do you have any advice for what is the best environment for prep in barbecue and grilling? I know much comes down to personal preference, but how would a trained chef like you approach prep for barbecue? For instance, do...

    Brisket moistness

I live in the Northeast where brisket is not commonly available in supermarkets, even gourmet ones. But I did find two in crivoc--8 pounds-- at the local Wegmans and made one with a DigiQ II cooker. I used Jim Minion's recipe as found in Jamie Purviance's Weber Charcoal Grilling cookbook. Well...

    DigiQ II Mount

For those with the DigiQ II, what configuration are you using to mount the bracket on the controller? One of the manuals shows mounting the viper fan but not the controller. There is a "universal mount hardware" for the bracket, but no probable configurations for attaching to WSM. Gary

    New Rubs from Weber

I was at Sam's Club yesterday and discovered Weber released four new rubs in their Grill Creations series. There's a classic BBQ rub, one for Salmon, and two others whose names I don't recall now. These are in addition to the seasoning sets they offered last year. Gary
