    First Smoke - Issues

Just a thought... Are we sure that the butt needs a lot more time to cook? Yes, it's possible that the fire died sometime in the night and the internal temp never got to where it needed to be, but... You said it was 11 hours between when you started and 6am when you had an internal temp of...

    Best Fire Starter for Tailgating

I always use paper towels, twisted and formed into a doughnut, sprayed with cooking spray under the chimney (and yes, that's with regular Kingsford, not and no lighter fluid)

Experiment - Sweet "Caribbean" Brisket? Thouhts - please share

Yes, sorry, the Hawaiian Ribeye. If you like the steak give the marinade a shot, it's really close and really good. Still curious about how it would translate to Brisket.

Experiment - Sweet "Caribbean" Brisket? Thouhts - please share

Below is a marinade recipe designed to recreate the Caribbean Rib Eye served at Houston's restaurants. I've tried it and the family love it. Costco brisket = good quality?

Suburban Atlanta here too... Where you at? I'm in Woodstock. The Wal-Mart nearest me has Select packers for around that price but Sams Club has Choice for about the same.

    Costco brisket = good quality?

Is it graded? I don't shop at Costco, but at Sams and can often find USDA Choice briskets at good prices.

    Noobie in need of help...

Thanks! Ok, if I go with Brisket first, then foil, towel, cooler... How long should I expect the 10lb (that weight is before trimming) brisket to take at 350?

    Noobie in need of help...

This will be my 3rd smoke on the WSM and I'm getting a little more ambitious. First time was a pretty simple turkey and last weekend I did some some baby backs that were GREAT, whole family loved them. This weekend, the parents and sister's family are coming and I plan on trying... my first...
