    Hi everyone, I put two 8 lb. butts in the WSM last night at 8:00 figuring they would be ready about noon today. Temps were stable at the lid at 235 when I went to bed at about 11:00. When I woke up at 5:00 a.m. the water pan was dry and temp. was 270. One butt was at 185 and the other at 190...

    I butterflied a 5lb. chicken and brined in 1cup kosher salt, 1/2 cup sugar, and 1 gal. of water for just over 4 hrs. It's air drying in the fridge now.
