I’d be very curious if others are getting better results with lump(and you are using lump in your pit boss, aren’t you?) in a kamado. I just wouldn’t expect a dead flat temp curve out of a natural material with the incredible size variations of lump. I’d be happy as a clam with your last graph.

Sounds like problem solved already, but I have had no issue running mine manually just controlling the other two vents. For higher heat cooks, I just start with more lit charcoal.
Title says it all. Cleaning out the garage and I no longer have a stumps. Don't want to dedicate the space to a huge pile anymore. That's as low as I'll go. 7x20lb bags.
It's a bit counterintuitive, but since I started keeping the lower and upper vents open when covered, I haven't had water in the bowl. I'm sure it's getting in, but it can also escape.
