    HH brisket help

I plan on cooking a 7-8# flat for the 4th in a 22.5" kettle grill using the HH method. Lit coals to occupy 1/3 of the bottom grate enclosed with a row of fire bricks. Aiming for a 5-6 hour cook based on touch and tenderness. A couple of quick questions: 1. Do I need to use a water pan over...

    ABT's on a Weber Q 100

Is it possible to make ABT's using a Weber Q 100? The reason I ask is b/c I've had great success using a WSM, kettle, and even a gasser, but I'm concerned that the proximity of the heating element to the griddle will cause epic failure. I've thought about putting them in an aluminum pan to...

    Beer can chicken help

Looking for tips for indirect grilling 2 beer can chickens in a Weber 22.5" kettle. The last time we cooked fryers I could not close the top of the grill b/c of the height of the birds. Each bird was @ 4lbs and I used 16oz cans of Bud to keep the birds upright. I would prefer cooking the...

    Boneless turkey breast

I'm smoking an 8lb butt, 2 racks of baby backs, and a 3 lb boneless turkey breast for the 4th in the WSM. This will be the first time I've done a boneless breast....any tips? Does it benefit more from higher heat @ 325F? If so, I will cook it separately on the kettle grill with indirect heat...

    Left over brisket ideas

I've got about 2.5 lbs left over from yesterday's brisket. Looking for any creative suggestions for dinner tonight. No chili, and prefer not to have brisket sandwiches. I was thinking about shredding the meat and combining with a liquid (beef broth, BBQ sauce?). Wife suggested we throw it in...

    Deep cleaning the WSM

Sad to report that I've totally neglected my WSM since my last cook in August. Since then, mildew and mold have overtaken the smoker, even with a Weber cover (moisture coming in from the ground up). What is the recommended product for cleaning the inside of the WSM? I plan on replacing all...

    Tailgating ideas with Q100

We typically cook burgers, brats, and dogs with our Q100's for football tailgates. I would like to try something new, but realize I don't have much surface area to get very creative. Any suggestions?

    Reheating pulled pork

What's the best way to do this? In the past I've put the meat in a small pot and mixed in some BBQ sauce and warm so that the pork stays moist. Or is it better to pop it in the oven and spray it down with some apple juice?

    Beef prices

What is a reasonable price/lb to pay for tri-tip? It has become one of my favorite cuts but we only have one grocerer in town (Whole Foods) that carries it and its an absolute rip off at $8.99/lb. Would a local butcher be a more logical and inexpensive route? Also....what should hanger steak...

    Ribs in the 22" WSM

What is the maximum # of baby back ribs that could fit in the new WSM? I've been told you can get up to 12 (6 top, 6 bottom) in the 18" WSM?

    Boneless and bone-in chicken

I have a unique challenge ahead for tomorrow's bowl games....my wife will only eat boneless, skinless chicken breast, yet I want bone-in breast and thighs. We are cooking for a crowd and this may consist of two separate cooks. Typically I cook bone-in chicken over indirect heat for 30-40 min...

    Butts and baby backs together

Is it possible to cram the WSM full of pork butts and ribs at the same time? Case in point...I am cooking BBQ for a work event this Friday. I need to prepare 4 slabs of baby backs and 4 pork butts. My plan was to begin the 7 lb butts overnight, and then add 4 'rolled' racks to the top grate...

Cleaning mold and mildew out of WSM

Are there any sure fire ways to remove mold and mildew from the smoker? In the past I've used greased lightening, but there is a significant odor along the walls of the WSM. Although covered, my WSM sits outside, and moisture collects inside of it with all of the rain we've had lately. Would...

    Mobility of a cooking WSM

Is it possible to relocate a WSM after its been smoking for about 12 hours or so? Case in point, we are tailgating for a 7:30 football game in which I would ideally like to begin the cook the night before--2 or 3 pork butts. Typically we arrive to the parking lot about 3 hrs early, but this...

    Tri-tip or bison?

as a meat for chili....what is the preferred choice? Our butcher carries ground bison and occasionally will have a tri-tip on hand. I've read that tri-tip is the preferred meat in chili comps, but I like the meat in chili to be ground, not in cubes. Would a butcher grind up a tri-tip? I will...

    Optimizing the WSM for ribs

I wanted to get the boards' opinion on the ideal way to cook more than 3-4 slabs of baby backs in the WSM (assuming that's possible). I typically cook 3 full racks and have been very happy with the results. This weekend I may need to cook 5-6 racks of ribs and don't have another smoker to use...

    Weber Q 100 or 200?

I've been planning on buying a Q200 for tailgating at football games this season. Recently I found a retailer offering the Q100 on clearance for $65. How hot can the Q100 range? I was thinking of buying 2 Q100's for $130 instead of a Q200 for $190--will I be disappointed? I'm looking to only...

    Need to replace PCI grates

I have a 3 yr old Weber Silver B that I would like to 'upgrade' my older porcelain coated cast iron grates to the newer version. Does anyone know if Weber offers these over the phone? I saw no reference to PCI grates on their website.

Indirect heat for baby backs on a kettle

I'm cooking two slabs of baby backs on my 22.5" kettle tomorrow while the WSM will be slam full of pork butts. What is the best arrangement of charcoal/heat for indirect cooking in a kettle? Should I pile the coals on one side with the ribs on the other, or have a two sided fire with small...

    Weber Grill Out Handle Light

Does anyone own/recommend on of these? I need a handle-based light for my Genesis Silver B. It claims to have three LED lights...is that powerful enough?
