    Stubbs Briquets

Truly, there was not a lot of ash. I got more ash with Kingsford. Seriously.

    Stubbs Briquets

1st time using Stubbs Briquets. Did two racks of ribs in the WSM and grilled some drummies on the Brinkman offset. Both went very well. I actually believe I like it better than Kingsford.

    turkey breast ideas??

My personal best on the WSM. My family calls me the turkey master. All I do is: Buy a Butterball (Brined by them) Leave it on the bone. Run the WSM at 350 Foiled water pan. Cook to 155ish Rest for 30 minutos Dig in. I would rather have turkey that way than any. As the others have said - go...

    Hushpuppies

OK.......this is my 89 year old moms recipe. I have been eating these hushpuppies for 52 years now and still remember the first time I ate a hushpuppy at a restraunt. I said "This aint no hushpuppy!" Heat your grease hot. True southerners call any frying oil "grease". At least I was taught that...

    Cabbage done right......

Going back over old posts and saw that Keri WOWed the fact that 30 minutes was the time on this cabbage. Please note that since the cabbage is cut into pieces is the reason for the short time. I buy a large head and cut into 8ths. Mikeeeeeeeeeeeeeeeeeeeeeeeeee

    Paw Paw's Sauce

Quite welcome....... Mike - as to the mustard, it's really only a small ammount. The combination of lemon and Worcestershire is the kicker. GOod on chicken. Mikeeeeeeeeeeeeeeeeeeeee

    Paw Paw's Sauce

Here is my time proven and tested sauce. I call it Paw Paw's Sauce. In a microwave dish place one medium onion minced really fine, two tblsp crushed garlic, and a large pat of butter. Microwave for 6-7 minutes. IN a pan on the stove put the following on medium heat. ¼ cup cider vinegar ¼ cup...

    BRITU Rocks!

I used the BRITU recipe, with the exception of finishing with my own sauce. Several people (me included) tried ribs with just the rub and were impressed with that flavor. I will use BRITU from now on. I used Bryan ribs. Pulled the membrane and "Dusted" with the rub. Mikeeeeeeeeeeeeeeeeee!

    Smoke wood in front yard

Do not use sweetgum for smoking. It has a funky smell when burning, especially if it contains a certain ammount of moisture still in the wood. I wont even burn it in my fireplace. Mikeeeeeeeeeeeee

    another turkey question

I agree with Doug. On turkey less is better when smoking. I use Kingsford with a foiled, empty water pan and maybe one medium chunk of pecan. One orange cut up in the cavity, and black pepper all on the outside and inside. I have never had anything but Oooooo's and Aahhhh's when I cook one...

    Your favorite recipe

One word - Butterball. If you want simple, get a Butterball turkey breast, cover it with black pepper, run that WSM at 350 with a foiled empty pan. Shouldnt take more than 3 hours unless you have a huge breast. Lip Smacking good. Mikeeeeeeeeeeee

    1st Brisket

One word - Awesome! I guess that I must have put just the right ammount of black pepper, cause the combination of that and the Montreal was very good. I pulled it out from the WSM at 8 this morning and put it in a 225 oven in a pan and covered with foil. It is falling off the bone - if...

    1st Brisket

Well, here it is 1:03 and my first brisket is "in the bullet". Came in from mthe new years service at church and fired off the bullet.I have always let the wife cook the briskets in the oven, as she does a wonderful job. But this time after all the great turkey I have cooked since buying the...

Ok so today I went to my butcher....

I never inject a butt. I am one who uses a thin sauce after the meat is pulled. My sauce soaks into the meat, thereby adding the exact flavor I want. Mikeeeeeeeeee

To pan, or not to pan

I love my WSM. Never before have I had turkey as good as this. I'm geting ready to try my hand at a brisket. For that - I know I will use a pan. Question centers aorund this. I have a friend at work who cooks wonderful boston butt on his ECB, and does not use the pan. Now - being a butt...
