Chimney & Paper Towel w/ Veg Oil

Homemade starter cubes for me...much better than the Weber cubes, Paper egg carton, a few wood chips, melted parrafin in poured in each depression. Cut apart and you've got a dozen custom firestarters with zero ash.

My neighbor has three bay laurels that got blown down during recent storms. I have a lifetime supply of bay leaves, but can I use the wood for smoking?

    Smoked eggplant "Meligana Salata"

Spyro gave us the recipe below a while back, and I am finally going to try it. I'm assuming this should be served at room temperature. Correct? If anyone has tried it or if Spyro is still around, let me know. Meligana Salata Roast Eggplant (slightly beaten with a whisk or fork) to make it...

    Stainless Steel cooking grate

When you say the stainless steel isn't clean do you mean it's not shiny or that it has charred food stuck to it. Discolored stainless steel isn't a big problem. My ss grates are a dark grayish brown after being cooked off on the grill. They will get shiny silver if I want to work at it with a...

    Annual Wine Thread

Agree wholeheartedly on the Rex Goliath Cab. Usually can find it for $5.99 on sale. I's made by Hahn in Montery County. Their regular Hahn label Cab, Syrah, and Meritage are also great at around $10. Two of my other favorite value producers are Bogle and Jewel, both just down the road...

    Jamacian Jerk rub/marinade

Here's mine. Don't usually do it on ribs, but it's great on a butt. I ususally like a boneless butt for this so I can get the paste inside it and then tie it up. Great on Pork tenderloin on the grill as well. 6-12 Scotch bonnet or habanero chile, stemmed 1 medium onion 1 bunch scallions 1...

    Another Turkey question

Nice looking bird. I've got a 9 pound capon ready to go and a 14 pound turkey split to go on the kettle.
quote:
You can get a rubbermaid container for 3 bucks from Wallyworld to put the turkey in.

I'm wondering...

    Pumpkin Ginger Cheesecake

One of my favorites. Always gets raves. Pumpkin cream cheese cake • • 3/4 cup flour • 1 teaspoon baking powder • 2 teaspoons cinnamon • 1 teaspoon pumpkin spice • 1/2 teaspoon nutmeg • 1/2 teaspoon salt • 1 cup sugar • 3 eggs, slightly beaten • 2/3 cup solid packed pumpkin • 1...

Do you have to flip a butt?

I usually take the John Kerry approach and do the flip/flop thing. Usually I'm cooking 3 or 4 at the same time, so I just flip them when I swap them from top to bottom. If I don't swap, I always find the bottom takes a lot longer. Wouldn't it be great if the grates were interchangeable....

    Early morning finish

I started four butts, about 30 pounds total, yesterday at about 3:00. Turned over and switched racks after about 7.5 hours. I started early because I expected more than my usual 16 hours with all that meat. The temp was stable most of the time (about 240 at the dome and 220 at the grate). A...

    minion method - health risks?

The arguments for and against here are interesting and amusing. Seems like everyone is trying to convince themselves they are doing the right thing. I think that's what you need to do in light of no strong evidence one way or the other. There certainly could be a difference between the...

    kamado charcoal

Tony, I think I'm with you. I bought 8 boxes, and I think they will be best for the kettle. It does burn hot, I think due to both the material (pure coconut) and the design (the hole in the middle increases burning surface area).

    ET-73 Reasonable Expectations

I got my new receiver from maverick and it is a big improvement. Get's updates from way out in the yard to the nightstand where I'll monitor my overnight cooks. Granted, lot's of people have had problems, but with Maverick and Gadget Source both willing to make you a satisfied customer, the...
