    The smoke taste was ok, but not as much as I would like. My family said it tasted fine, but it's nowhere close to where I want it. I guess next time I will smoke at 250 using only hickory and start testing for done using probe at 190.

    Need help with brisket. I just can’t seem to get it right. Here’s what I’m doing. Equipment WSM 18.5, cyberq set at 225. Charcoal with minion method and 3 big chunks of pecan and 3 big chunks of hickory. I trimmed the roughly 12 lb (Prime) brisket down to about a ¼ inch of fat. Coat it with...

    Also, should I cover the probes where the wire connects to the tip with a heat shrink tube so that moisture doesn't get in there or would the heat shrink tube just end up melting off?

    I appreciate the advice. I don't know that I need to run two different smokers right now, but I like knowing I have the option to do so in the future. I'll do a little more research into the cyberq also

    Has anyone successfully smoked three or more pork butts on a WSM 18.5 at one time? I've never done more than one, and have recently been told I have to do three for an event at school. I'm a little worried about controlling the temp and getting them to fit. When I smoke one, I don't have to...
