    New 18.5 owner

    you'll do fine with the 18. i have the same and it's just me, my wife, and our newborn. i've smoked pork ribs, beer can chicken, turkey breasts, and a pork shoulder or two on mine over the past few years and never felt like i needed to go bigger.

    Few pics of a boring rib smoke

    I used to foil them but the extra effort didn't seem to make too much of a difference. I now just season them and throw them on at 250-275 for about 4.5-5 hours. I baste at the 3 hour mark, and slather on some bbq sauce towards the end.

    Craycort Cast Iron Grates

    Got a Craycort cast iron grill grate for my Weber OTG for Christmas and haven't gotten a chance to use it yet. Anyone here have any tips or recommendations for first time use? I think I read it will need to be seasoned before/after each use...

    Where do you keep your smoker/grill?

    WSM isn't used as often so it stays in the garage when not in use. I have a OTG that sees more duty so it stays on my back deck. I got a heavy duty grill cover on amazon last year since the cheap Weber one would never hold up outdoors all year round.

    also keep in mind that adjusting any of the vents won't adjust the temperature right away - usually takes 10-15 minutes to see a difference.

    Best way to bring the 18.5 to 280-300 ish degrees for chicken

    when i started out, it took awhile before i realized that adjusting the bottom 3 vents wouldn't change anything right away. you need to adjust and then give it 10 or so minutes to notice any change in temp.
