tail gating grill? weber Q or Smokey joe?

Matt, That would have been my choice, too. Not sure about your stadium, but here in Kansas City at Arrowhead, they have bins for dumping spent charcoal. So, after you're done with your cook, smother the coals with sand or water and then take it to the dumpster. Sure beats coming out after the...

    Baby Backs, price drop

Our local grocery is doing bb ribs for $3.99/lb. Not sure what our local Sam's or Costco are doing. sam

    Birds on top?

I do what Keri C does (Hi Keri). If I need to put a bird on top - like a big turkey - I'll put it in a throw away aluminum roaster pan. The taste is the same and I can smoke whatever on the bottom rack without worrying about any of those big words like, "toxins", "samenella", "bacteria". Happy...

    Commercial BBQ Suaces

Scotts Barbecue Sauce This isn't really a "sauce", it's spicy vinegar that can be used like a sauce. It's GREAT on pulled pork sammies. I also like Arthur Bryants. That may just be available in the Kansas City area.

    Another NC Vinegar Sauce

Here's the recipe from Steven Raichlen's "How to Grill" cookbook. 2 cups cider vinegar 3 tablespoons ketchup 2 tablespoons brown sugar 4 teaspoons coarse salt 1 tablespoon Tabasco or other hot sauce 1-2 teaspoons hot red pepper flakes, or more to taste 1-2 teaspoons black pepper Combine all...

Pulled pork finishing sauce - Eastern NC Style

Got my sauce and it has some very interesting characteristics. Starts out a little sweet which is then followed by a slow burn. I liked it. Wouldn't call it my most favorite, but it offers a nice change of pace. I also used it as a dipping sauce for pizza crust last night. I like the NC...

Pulled pork finishing sauce - Eastern NC Style

I got two 16 oz bottles shipped to Kansas and the total, including shipping, was $12. It should be here today or tomorrow. sam

WSM smoken in the rain and cold. (long)

When it rains and I wanna 'que, I do one of two things...move it to the front porch, where it's covered or move our patio umbrella and stand over to cover it. I've also used a golf umbrella. sam

Where to find woods for smoking?

My local ACE Hardware store stocks all kinds of wood chunks ... Alder, Grape, Peach, Hickory, Mesquite, Perssimon, Apple, Oak, Pecan ... $7.95/bag (7-10 pounds I think).

Pulled pork finishing sauce - Eastern NC Style

Thanks Steve. Just got off the phone with Sybil and have two 16 ounce bottles coming my way. Figured I'd start small, just to make sure it was to my liking. Of course, when we're talkin' que, what's not to like.

Pulled pork finishing sauce - Eastern NC Style

Steve, I took a look at the Web site you posted and that stuff looks good. Unfortunately they don't sell it in Kansas City. Go figure. Oh, well. It's not a "traditional" Kansas City type of sauce. Anyway, I'm getting a quote for shipping. Thanks for the lead. I like fiery vinegars. sam

    Persimmon Wood

I read in the archives that this is an acceptable wood for smoking. Has anyone have any experience using this wood? If so, what sort of characteristics does it have? The pickings were slim at our local Ace Hardware. However, they had a couple bags of this. Thanks, sam

    Smoking With Sand??

    Randy Parr said:
quote:
I know it must sound bizarre, but for those that may want to use both water and sand at different times...unless you get a second water pan, it must be a pain to deal with...just wondering...

    Alternatives to WSM?

When I was shopping, I looked at a $600 Hasty Bake (considered by many to be the Caddy of charcoal cookers capable of doing both grilling and smoking) and a Good One offset. Instead, I opted for the WSM. It is: - the right size (I can smoke a little or a lot). - easy (EASY) to use. - very...

    Success... on a Smokey Joe?!?

I did ABTs last weekend on my Smokey Joe. Same fire method - half a chimney pushed to one side. Had the bottom vent at about 30% open and top vent wide open. One wood chunk. Works good.

    Creamed Smoked Salmon With Peas

This is a great combination. This is one of my Dad's "comfort" foods. He came over for dinner a couple of weeks ago and I made him salmon patties with creamed peas. Never thought to mix it together and pour it over something like garlic mashed potatoes. Makes me hungry.

    Smoked Pecans

Did some playing around this weekend and smoked some pecans. Pretty tasty. I imagine this would work for almonds, too. About 2 T. butter/margarine Salt to taste A couple of handfuls of shelled pecans Smear the butter on the bottom of some foil. Roll the nuts in the butter to coat. Salt to...
