    Super Low and Super Slow = Brisket Flat Success

    Rich, thanks for the post. It was extremely helpful to know how to deal adjust the temp and cook time for flats only. I'm smoking my first brisket today, in fact I'm just waiting for temps to stabilize I'll they're going on. Wish me luck!

    Dougherty's Wings

    So I'm all set to try these out for the first time tomorrow, and I have a simple question... after trimming and prepping the wings am I supposed to simply season each of the wings with Santa Maria and Old Bay before placing them on the grill?
