    Help with Brisket

    Good day EH! I going to try Brisket for the frist time! Do you bring the internal temp to 180, then wrap in foil place back on the smoker to 200??? Just like doing a chuck roast, or do you let it sit until 200 take it off and let it rest for 30 min.? Cheers

    Help with Turkey

    Hi all, Next weekend will be Thanksgiving for us north of the border(Great White North) I have not smoked a Turkey on my WSM. Have done Turkey on my gasser, but I would love to do one on WSM next weekend. Any expert help would be appreciated!! Cheers

    Larry, Well we are waiting to hear the outcome of your trial with Texas BBQ Rub??? Tried mine with a blade roast(small chuck) 4 pounds used #2 turned out fantastic. gonna try #1 on a meat loaf later in the week. Cheers
