    Water pan cover

Saw an aluminum cover for the water bowl in the WSM, on Amazon for $29.99. Any opinions from those that have used it? Thanks, Al

    Santa Maria Grill for Kettles

Sorry for being late to the party, but I have an SMG from a company called Gabby's grills. Very simple design, but it's all steel and cast iron. It works beautifully and I just love it! I have some grill grates that were cut for my 22.5 Performer that I use on the cooking surface of the SMG...

Arizona > Phoenix: Little Miss BBQ

This is the real deal, guys. I have been there a few times and it is Amazing! Best brisket I have ever had yet; fabulous flavor & texture. Everthing else is awesome too. Only thing I haven't tried is the pecan pie. You people in Arizona owe it to yourself to try it! I love this place! Al

    Lookin' for turkey

Anyone know where to find whole turkeys, now that the holidays are all gone? None of the local grocery stores have them, they said not until October-ish. Thanks, Al

    Emptying the water pan

Anyone have any ideas on how to empty the water pan after a cook without making a HUGE mess trying to balance it to lift it out without spilling it everywhere. I'm using a 22 WSM and the pan clean up is such a pita that I've learned how to operate quite well without it tho I would like to use it...

    1st comp. soon

Thanks for the kind words, Bob. The ribs I turned in passed all the criteria you stated; but what is the significence of the dry bone? Our bones turned bleach white almost immediately after taking a bite. I have heard of this qualifier, but noone ever explained why it's important. Sincerely, Al

    1st comp. soon

Did the comp. last week. Not the results I hoped for but had a great time. We finished mid-pack out of 48 teams. The comp was for ribs only. Our scores were opposite of what we wanted; highest for appearance, then taste then tenderness. I was really disapointed at the mid range scores for...

    1st comp. soon

Hi everyone, I will be in my first comp in a few weeks (amateur division) in the suburban Chicago area. How do I know or find out what flavor profile the judges are looking for? We will be doing ribs. I have 2 sauce recipes of my own, 1 mild/sweet and 1 sweet/spicy/peppery. I would appreciate...

    Silver skin

Hi everyone, Just saw an episode of Diners, drive-ins & dives where they were showing ribs being rubbed & smoked without removing the silverskin, but removing it after the ribs were cooked, before serving. The pitmaster said this helped the ribs retain more moisture, and they sure looked like...

    Lower grate mod

I haven't done this mod yet, but maybe someone here has, and can let me know if this would work ok. Basically I would like to lower the bottom grate about 3", which would make access to food on that rack much easier thru the side door and still allow room to add fuel as needed. I'm wondering...

    Wind break

Just started using my iq 110 with good results but in good weather (80 deg. & light wind). I used it with all the bottom vents closed and it held temp very well. Do any of you users think this will negate the need for a wind break in windy/cooler conditions? I'm thinking that if all the bottom...

    Switching lids

Has anyone tried using the lid from a standard 22.5 Weber kettle on the 22.5 WSM? Just wondered what effect the lower dome height would have on food on the top grate of the WSM, or the overall performance of the WSM. Thanks, Al

    New weather cover

I'm looking for a replacement cover for my Weber performer which is 11 or 12 years old, and all the covers I see listed are only supposed to fit models from 2005 and later. They look to me like they will fit; anyone know for sure? Thanks, Al

    A-Mazin-smoker

I am having trouble keeping it lit in my wsm, since it's fairly air tight. No trouble with my el-cheapo side fire box Char-griller, that thing leaks air like crazy!
