So today I cooked a little top sirloin for lunch/dinner. Had a productive week so I rewarded myself. Started off by smoking my neighbors out with a Diamond Strike-a-Fire, fire starter. Only one left then I won't buy anymore of these! On went some potatoes in EVOO, onions and mushrooms...

    Kettle jerky

So on smoke day(don't own a WSM so I used the kettle) I made some sweet and spicy jerky. I used the same technique I used the other day. Coals in the ash catcher. Nine unlit and one lit coal to start off with. Used Kingsford hickory briquettes plus a couple of hickory chips. Took an hour...

Low heat no stone pizza on da grill

So I am going with pizza dough on the grate again. Finally figured out what I am doing with the dough. First I use some bricks to divide the grill into two zones. Hot and not hot. The grate is oiled and placed over the coals. I use a 88 cent ball of pizza dough from the Wal Mart...

Today will be a sirloin tip roast. The roast I have selected is 2.3 pounds and around 2" thick. There will be three steps. First make a rub and let sit. Second a high heat sear. I will be doing it on top of the charcoal chimney. Lastly we will cook it indirect with a little smoke...

    Potato grenades w/hot sausage

So this is my take on the BBQ Pit Boys, "potato bomb". With their potato you can't stuff much inside the potato, with mine you can fit a lot. For mine as the above CAD drawing shows you carve out the inside instead of just using a apple corer. For this I used a knife and a cheap spoon I...

STOK CI great not so great...

So I have had this thing about 8 months now. I really like the fact the charcoal chimney fits inside the insert hole. But when I cleaned out my grill yesterday after the ash catcher locked up on me. I found rust. This thing is porcelain coated but apparently it is not that great. Oh well...

    NY Strip and veggies

This is the first time I have fired up the kettle since the beginning of the year. I think they are trying to kill me at work. So for vacation I picked up a NY Strip, 2" thick and 1.5 pounds. Salted the outside and let it sit. While the strip was salting, I fired up the grill and put on...

So here is something a little different. Made a beef shawarma which is basically a middle eastern soft taco. It has 3 parts to it a marinade, toppings and a sauce. For the marinade you want a cup plain yogurt, 1/4 cup vinegar, 2 cloves garlic, 1/2 tspn salt, 1 tspn ground cardamom, 1 tspn...

    Tahini sauce question.

Question, am making a sauce for a Lebanese sharwarma. 1 cup tahini 1/4 cup lemon juice 2 cloves garlic, minced 2 tablespoons yogurt When I first mixed the ingredients they were a thick liquid. After I stirred it with a fork it came out like peanut butter. Is this what it is supposed to do...

    Bar-B-Kettle/OTG hybrid

Has anyone ever taken a OTG silver or gold and made a hybrid? What I am talking about is taking a 18.5 lid vent replacement kit and drilling out the bottom of of a OTS/OTG and putting the vent down there like an old Bar-B-Kettle. Just a thought. Have a older platinum offered to me for free...

STOK Grills on sale @ Home Depot

Was just in a Home Depot. It appears these may have been discontinued. Seen one today for $50. I think I payed $50 for the CI grill alone. At that price I am thinking of picking it up tomorrow. Another CI Grate, pizza stone and the handle tool. Take the rest of it to the metal recycling place.
