I use the HM just for temp monitoring, i don't need the fan function as i have a pellet grill. I wanted more probes than the mavericks have and 4 probe devices weren't yet available so i built a HM and haven't looked back..
Quick thought, are you changing the ip on your desktop/laptop to the same range. I change my desktop ip to 192.168.200.5 to connect to the default HM ip and change back when i'm done.
I would check both the probe and the dome thermometer with boiling water to see how much difference there is. My thermoworks probes are pretty much dead on 212.
