    What's On The Menu....

Four, four lb boneless butts are in the fridge since 10 this morning enjoying their rub. I plan to fire them up at six tomorrow am. I keep one and spread out the other three throughout the "hood". The neighbor lady bought these. I get one or more if she buys the meat. Is this a great...

    Heat Sink Sand

Water or sand will certainly moderate the "swing" in temp we encounter during a smoke as discussed in the thread. I prefer the water, or should say "broth" method. I season my "water" with a number of recipes of herb, spices, and fruits etc. depending upon what I'm smoking. I start the broth...

    Soaking grills

When soaking my grills I use automatic diswaher detergent. Works great. Saves on the elbow grease that sometimes can be needed.

    WSM as a grill?

After 20+ years cooking on a Weber kettle and an owner of the WSM for three years. I looked at the two and found WSM does double duity as a grill very well. Small for a large party but great for a dinner of three to four. Anyone else using the WSM as a grill?

    Trouble starting Kingsford charcoal..

Living in the deep South I appreciate "fresh" charcoal. I tried Home Depot. Poor results. Hard to start. I now buy only from Publix. More expensive, always "fresh". Charcoal is a mostiure magnet. It is used to absorb moistue. I buy only the 20 lb bags. 20 lb bags have a quick shelf...

    Question after first use...

David, Regarding the water pan. Get a larger pan that is discussed else where in the BB in detail. I always start a kettle of 6 qts of water on the stove just before I start the charcoal. To the water I add what ever. Onion, garlic, apples , oranges,, what ever depending upon what I'm...

I toss the contents (That to which is left after making gravy, O man) in the compost. It can't be hurting anything by the looks of the pumkins that are growing around the pile. I guess I pitched a pumkin in ther early last November!!

    Bullet Cover

My Bullit cover has pin holes in the top. I cannot locate one locally, Jacksonville, Florida. I contacted Weber. They want $35.00 + and will not ship for 10- 14 businees days. Does anyone know where I can purchase out of inventory at a better price? Thanks, SKG

    Adding Water

Check out Dave Stampler's comment in the water pan modification section. Dave mentions the added water capacity which is critical. Enlarge the photo and you will see that the Brinkman water pan has a flange. The flange seals off the lower uint and directs more energy into the water pan rather...

    First Turkey

Jim, Thanks for your reply. I smoked the bird and it turned out pretty good. I did not brine. I cooked @ 230-250 for about 12.25 hours. 10 Apple chunks. Three during the first four hours and then the balance throught the process. Added appx 1.25 gallons of water through the process. 14...
