    Things not to do with your WSM

    Do not and I repeat do not wash the water tray in your brand new white coated cast iron Kohler sink that is soo beautiful. It WILL scrtatch the coating... just did it last week. Wife is not toooo happy.

    Veal Shanks?? Need Help

    Hi, I have a large family gathering and will be smoking a brisket (done it), Ribs (done it) and I have two 4 Lbs Veal Shanks whole. My temperature will be 220-240. Does anyone know how long these should take and should they be marinated overnight?
