    They were already sliced in the package from the grocery. However, I would have sliced them anyway to get more bark. I do not know how it effected the cook time. This was my first time cooking or even eating beef ribs.

    I decided to try some barbecued beef short ribs for the first time. I started with by mixing up a spicy rub and smoked them at 225 F with a little cherry wood on the coals in my Kettle. 6.5 hours later, the ribs turned out perfect.
