    Vortex for kettles

I could see a single stainless bowl working well. Why did you put two together? Im picturing an hour glass type shape? Seems like two would defeat the purpose.

    Vortex for kettles

I made one almost identical to the vortex by cutting the bottom off an old stainless beer fermenter. Works great and I use it almost every time I fire up my kettle. I like the fact I can put it narrow side up and fill it with charcoal creating nice even indirect heat with the lid on, I just...

    PizzaQue

Anyone have one of these or seen them in action? Seems like a much cheaper Kettle Pizza kit. http://www.homedepot.com/p/PizzaQue-Pizza-Kit-for-Kettle-Grills-PC7001/205581858

    Picnic cut vs boston butt

The Lechon Asado recipe looks great! I want to try it for Xmas eve with a Picnic. How do you deal with the skin? Cook skin side up or down? Is it good eating? I saw a recipe that called for trimming it carefully leaving one side attached so you could lift it and season under it.

    PSB Substitute Ideas?

Only worry with the IPA is that if its overly bitter that may come through. Probably not an issue in a dish like that but I made a BBQ sauce w a bitter beer and it was way to bitter. Sauce got cooked down and reduced though which concentrated the bitterness. Throw a TBS of Molasses in w the 312...

    Brisket Prices

I just saw 3.99 at the Business Costco in Las Vegas for a Full Packer, the regular costco by my house had the Flat for 7.99! I also noticed the Business Costco had Bone in Pork Butts where the regular only has boneless. .40 cheaper for bone in which I prefer anyway. I swear the ribs were .70...

Stages of a hobby (kinda long)

Same deal with me on several hobbies. One turned into a career and I havent done it outside of work in over 12 years! I think its good to be self aware enough to realize your patterns. As I get older I catch myself and waste less money (usually), stress less over the details (mostly), and have...

Nevada > Las Vegas: Rollin Smoke Barbeque

Rollin Smoke Barbeque http://rollinsmokebarbeque.com/ This place is just off the Strip on 3185 S. Highland Dr. A little tricky to find but worth it. Judging from the decor they are from Arkansas and specialize in Southern Style BBQ. Looks like they are cooking on a Southern Pride type trailer...

Nevada > Las Vegas: John Mull's Road Kill Grill

As a Las Vegas resident I can pretty much agree with the above review. Mulls is a better butcher than BBQ joint but its not bad just not great. Its definitely in a funky location which is pretty much a residential neighborhood. If you didnt know it was there you would never stumble upon it.

Quick tips for newbies- offer up your's

Relax, have a beer and dont stress. Pick a method and try to master it. Don't jump around trying new ideas until you master one. And make a list of what you need so you're ready once you start! That helps with the relaxation. You tend to learn as much or more from your failures than from your...

    Hello from Fabulous Las Vegas!

Proud owner of a Weber 22" Kettle, WSM 18" (permanently borrowed from Dad), PBC,a little 18" Kingsford Kettle my neighbor tried to throw out, and a gas grill thats been collecting dust and acting as a work table. Smoked a nice spatchcocked 21lb Bird on the Weber Kettle yesterday. Delicious! I...
