Actually with my gas smoker this is not the case, specially with the changes in outside temperature, water levels and wood. And with colder tempers the propane in the tank actually start to lose some of its pressure.
Some tips I can give you is make sure the pad is completely covered with solder, also I use sliver bearing solder because it has a lower melting point then most other lead free solders.

I believe anything above 128 mb should work. You'll have more of a problem with the RPi not liking the card then anything. I have had 2 sd cards not work with the RPi but worked just fine in a camera or computer.
