I read some stuff about cureing stuff like ham, bacon, etc. Now I am interested. I haven't got the smoker done yet. I was wondering about maybe I could cure a pork butt or shoulder on my 22" weber Kettle one-touch.
Is there hope for me?

Great idea. Going to find the expanded metal today. Gonna get enough expanded metal to cover the charcoal grate, and enough to make a container to sit on the coal grate to hold the coals for a hotter fire.
Now I gotta find the expanded metal.
Did my first cook on my SJS, just got it sunday. I put a control knob on the lower vent tab ao I don't burn my pinkies adjusting the vent. Then drilled some holes just below the lid of a suitable size can then cut the can down to about an inch +. Now it won't be bothered with ashes and still...
I am looking for an ash cleaner like on the 1-touch to keep the lower vent clear on my SJ. I just did the mod on the lower vent tab, works like a charm. I got finger prints again.

I use bricks to separate the charcoal from the indirect side. I think the expanded metal would work also, & you can shape the metal to how you want the fire to be
