I am here in south Texas, Kingsville to be exact.

I just picked up a Weber Smokey Joe,(10020) . We have a platinum 22.5 with a Slow n Sear, and allthough I really like cooking on it. It is kind of big for the 2 of us. So we picked up the Smokey Joe. So we'll save the platinum for special cooks and use the Smokey Joe for steaks and stuff.

I know I have to fix the lower vent tabs on the Smokey Joe, so I don't do any searing of my finger tips trying to set temperatures. Is there anything else I need to mod?
