I understand what you're saying about the books but honestly this site and Amzaingribs.com are my go to sites. Jerry N is right, check out the beginner cooks as they are helpful and give you something to follow in the beginning. Have fun and enjoy!
I also go top grate as close to the middle as possible in my 18.5. I don't see any real fluctuations just steady as she goes.I pretty much ignore the dome and go with the probe temp. Also if there are any spikes in temp I don't get excited it typically settles back down to where you want it.
I have a 18.5 WSM and it works like a champ but I'm always wishing I had a little more. The 22.5 would be my first choice but 14.5 would be a no go. Go big or go home!! ;)
I foil the top of water pan with a few pieces to catch the drippings because it's just easier to clean. I don't get too precise with it, just cover the pan. I have some ceramic briquettes in the water pan and I definitely have not interest in the cleaning those. I'm also lazy! :D
