    Need help getting high temps in the WSM

    I like to cook some things at a high temp. to do this, I light 3 chimneys and fill the ring. sometimes, I will get a lid temp of 340 -360. but sometings it only runs 290 - 310. This is when the outside temp is about the same. What can I do to get the higher temp?

    Cooking brisket and beer can chicken together....advise please

    I wouild like to cook a 5 lb brisket flat and 4 small beer can chickens together on the WSM. usually I cook chicken hoter than brisket. any advise on what temp I should use and how long/
